      Ice-cream, just like many other milk products, are very rich in proteins and are also full of water. Bacteria live happily in this environment. Freezing ice cream slows down bacterial growth but doesn’t actually kill the bacteria, which begin to grow again as ice cream becomes liquid/soft (when you have opened it and used it). This is the main reason why old ice cream can make you sick.
